Cook What

You Crave.

Hands-on Sichuan cooking in a communal kitchen built for curiosity. Doubanjiang blooming in hot oil. Dough that pulls like silk. A table that feeds twelve strangers who leave as friends.

02 / Sensory Journey

Five senses.
One kitchen.

Every class is designed to overwhelm you โ€” in the best possible way. Follow the meal from ingredient to table through touch, scent, sound, and fire.

See

Jewel-toned mise en place

Dried chillies the colour of garnets. Fermented black beans like obsidian pearls. Doubanjiang โ€” that rust-red paste that smells of time and salt and something alive. Before the flame, everything is still. You lay it all out and already the meal is half-written.

Taste

The numbing electricity of huฤjiฤo

Sichuan peppercorn doesn't burn โ€” it hums. A low electric current that spreads across your tongue and makes every other flavour louder. Then the doubanjiang hits hot oil and the room changes. Fermented funk meets charred sweetness in a single second that explains why Chinese cooking took ten thousand years to perfect.

Smell

Charred scallion and sesame breath

Garlic hits carbon steel at four hundred degrees and the Maillard reaction writes a sentence in smoke you'll remember for years. Ginger follows โ€” sharp, green, medicinal. Then sesame oil, added last, off the heat, so it stays raw and fragrant. Three ingredients. One breath. The whole kitchen changes.

Hear

The wok's vocabulary

A dry wok sounds like distant rain. Add oil and it whispers. Add aromatics and it roars. The cleaver on bamboo โ€” a steady, rhythmic percussion. The lid clattering on a clay pot, steam pushing through the gap. These are the sounds of a kitchen that means it. You'll learn to listen for them.

Touch

Dough that pulls like silk

Hand-pulled noodles start as a rough mass and end as something improbable โ€” long, even, almost translucent threads that took your hands twenty minutes to coax into being. The dough is alive. It pushes back. You learn its resistance, then its yield. The moment it stretches without tearing is the moment you understand.

From the table.

Portrait of Priya Mehta, a woman smiling warmly in a kitchen setting
I've eaten mapo tofu at every Sichuan restaurant in the city. I thought I knew what it tasted like. I didn't. The moment the doubanjiang hit the oil I understood โ€” I'd been eating the echo of the real thing. Now I make it myself, every other Sunday, and my kitchen smells like Chengdu.

Communal dining table with shared plates of Chinese food, wine glasses, and guests leaning in close conversation

The shoulder of the stranger beside you is closer than you expected.

Every class ends at a long table. Shared plates. Open wine. The kind of conversation that only happens when everyone's hands are still warm from the wok.
